Барбакан производится на заводах ACCBC в Даммаме и Дубае. Его варят с помощью трехэтапного процесса, включающего затирание, фильтрование и кипячение сусла. [8]

Во время затирания ячменный солод грубого помола подвергается гидратации водой при различных температурно-временных режимах, что способствует медленному расщеплению молекул крахмала на простые углеводы, обеспечивая сбалансированное сочетание углеводов и белков. На стадии фильтрования все растворимые твердые вещества из ячменного солода извлекаются, избегая резких и вяжущих компонентов из шелухи ячменного солода, оставляя после себя сусло. Извлеченное сусло варят вместе с хмелем, что придает солодовому экстракту аромат хмеля и горький вкус. Солодовый экстракт стабилизируется и стерилизуется при кипячении. [8]
